If you’ve ever visited Canada or have Canadian friends, chances are you’ve heard of poutine. This iconic dish, hailing from Quebec, is a delicious combination of crispy fries, rich gravy, and squeaky cheese curds. It's comfort food at its finest! Today, I’m excited to share my favorite poutine recipe that's perfect whether you’re hosting a game night, celebrating with friends, or just indulging in some tasty treats at home.

Ingredients:
For the Fries: - 2 large russet potatoes - Vegetable oil for frying - Salt, to taste
For the Gravy: - 2 tablespoons butter - 2 tablespoons all-purpose flour - 2 cups beef or chicken stock (homemade or store-bought) - 1 tablespoon soy sauce - Salt and pepper, to taste
For the Toppings: - 1 cup cheese curds (preferably white cheddar) - Fresh herbs (like parsley or chives) for garnish (optional)
Instructions:
1. Prepare the Fries: - Start by washing and peeling the russet potatoes. Cut them into thick strips (about 1/4 inch) to make your fries. - Rinse the cut fries in cold water to remove excess starch. Let them soak for at least 30 minutes, or even better, for a few hours in the fridge. This step helps achieve that extra crispy texture! - After soaking, drain and pat the fries dry with paper towels.
2. Fry the Potatoes: - Heat the vegetable oil in a deep fryer or a large, heavy-bottomed pot to about 350°F (175°C). - Carefully add the fries in batches, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown and crispy. - Remove the fries with a slotted spoon and let them drain on a paper towel-lined plate. Immediately season with salt to taste.
3. Make the Gravy: - In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 2 minutes until it turns a light golden brown. - Gradually whisk in the beef or chicken stock, ensuring there are no lumps. Add the soy sauce and bring the mixture to a simmer. - Let the gravy cook for about 5-10 minutes, stirring frequently, until it thickens. Season with salt and pepper to taste.
4. Assemble the Poutine: - On a serving plate or in a shallow bowl, place a generous serving of fries. - Sprinkle the cheese curds over the hot fries—this will help them melt slightly. - Pour the hot gravy over the fries and cheese curds, making sure to cover them well. - If desired, garnish with fresh herbs for a pop of color and added flavor.
5. Dig In! - Serve your homemade poutine immediately while it’s hot and fresh. Enjoy it as a hearty snack or a side dish to your favorite main courses.
Tips for the Perfect Poutine:
Cheese Curds: Fresh cheese curds are key to authentic poutine. Look for curds that have a slight squeak when bitten into!
Gravy Variations: Feel free to experiment with different types of gravy—vegetarian or mushroom gravy can be a delicious twist.
Fries in the Oven: If you prefer a healthier version, you can also bake your fries in the oven until crispy.
This poutine recipe is sure to be a hit with family and friends. Whether you’re enjoying it at a cozy gathering or as a late-night snack, the combination of crispy fries, warm gravy, and melty cheese is simply irresistible. So, gather your ingredients and get ready to indulge in a Canadian classic that you can proudly say you’ve made yourself! Enjoy!
